Denatured alcohol includes additional chemicals like Bitrex, which allows companies to avoid the extra alcohol taxes collected on food grade alcohol. Bitrex has a very strong chemical smell, that most people associate with and confuse for pure alcohol. 100% organic sugarcane alcohol actually has no smell at all.
